Perfect rice doesn’t have to be a fine art when it can be a science. Start by following one of the basic Rice Cooker mode recipes to familiarise yourself with the correct proportions of water to grains. Then make your own adjustments. Also suitable for grains, such as spelt.

Kettle is a mode used to heat water to precise temperatures. Green tea, for example, is best brewed at 80°C, and 96°C is the optimal water temperature for making coffee. This precise control over the final temperature of the heated water means that your drinks will never be too hot or too cold, but just right! Use Kettle mode exclusively to heat water - small amounts of tea, herbs and spices may be added.

In some cultures, the perfect boiled egg is known as the 7-minute egg. We’ve taken that sense of precision a step further. Place 2-6 eggs (53-63 g each) directly from the refrigerator in the mixing bowl without the simmering basket, then cover with water up to the 1-liter mark. Choose your desired setting (from soft to hard) and start the mode. Forget about counting the minutes and seconds: TM6 will ring at the precise moment when you have to remove the eggs. For perfect results, remove the eggs immediately!

In Turbo mode, you’re operating the mixing knife at maximum speed in short bursts. This mode is just the thing to chop up hard ingredients such as Parmesan cheese, cured ham, or chocolate into medium or small pieces. You can also briefly chop citrus with water to obtain their juice without getting the bitter flavour from the white pith of the skin.

In this mode utilising the Thermomix® Cutter accessory (purchased separately), you can use the two-sided cutting surface to prepare everything from chorizo to cucumber. What size do you want them to be? You decide by rotating the Cutter clockwise for thick slices that you can roast in the oven and counterclockwise for thin strips that are just perfect for adding to coleslaws and salad garnishes. Because every good cook knows the importance of cleaning up properly. Pour in a maximum of 1 litre of water and add a maximum of 50g vinegar or a small amount of dishwashing > short - for when you are in a hurry (runs between 1 and 2 minutes) > dough - for raw flour or raw starch doughs > universal - which cleans at a medium temperature, for rice and all other types of food > fat and caramel, which cleans at an high temperature to remove sticky residue > browning - which cleans the base of the mixing bowl at an extra-high temperature For browning, only use vinegar or a very small amount of dishwashing powder - liquid soap could create too much foam.
